Gearing up for the 2-day shoot on Monday and Tuesday nbsp About to head out to buy ingredients and will spend weekend prepping and making each of the following dishes in 3 stages of completeness 1st nbsp nbsp Completely cooked and plated for beauty shots2nd nbsp Partially done3rd nbsp nbsp All individual ingredients measured out and in ramekins or mixing bowlsPumpkin Cupcakes2 cups whole wheat pastry flour1 tsp baking powder1 tsp baking soda1 tsp salt1 tsp cinnamon1 tsp ginger1 tsp nutmeg1 tsp allspice4 eggs4 Tbsp canola oil2 3 cups applesauce1 cup lowfat buttermilk1 2 cup brown sugar1 3 4 cups pumpkinMakes 18 cupcakes Preheat oven to 350 degreesIn a medium bowl whisk together the first 8 ingredients all the dry ingredients In a large bowl whisk together the eggs canola applesauce buttermilk brown sugar and pumpkin nbsp Once that is well blended add the flour mixture in 3 batches to make sure it is well incorporated Fill cupcake tins about 3 4 full nbsp I recommend using a non-stick cupcake tin nbsp Place in middle of the oven and bake for 20-30 minutes until your tester comes out clean and the cupcake springs back when you touch it nbsp Remove from oven and let cool before icing Icing1 8 oz packages of low-fat cream cheese2 Tbsp skim milk1 tsp vanilla3 packets steviazest of one lemonBlend until smooth with an electric mixer nbsp Ice the cooled cupcakes and enjoy Apple Cheesecake TorteCrust1 cup graham cracker crumbs3 Tbsp melted butter or margarine 1 4 tsp cinnamon1 4 tsp nutmegCream Cheese Filling2 - 8 oz packages of low fat cream cheese at room temperature1 2 cup sugar or sugar substitute 1 tsp vanilla2 eggs at room temperatureApples2 large tart apples such as Granny Smith - peeled cored and sliced1 4 cup sugar or sugar substitute 1 2 tsp cinnamon1 2 tsp vanilla1 3 cup chopped walnutsPreheat oven to 350 degrees Combine all crust ingredients until the mixture resembles coarse meal nbsp Press into bottom and up about 1 of the sides of a 10 inch springform pan nbsp Bake for 5 minutes cool to room temperature Increase oven temperature to 450 degrees Beat cream cheese sugar and vanilla with an electric mixer until smooth nbsp Beat in eggs one at a time nbsp Spoon mixture into crust Mix apples sugar cinnamon and vanilla nbsp Spoon over cream cheese mixture and then sprinkle with walnuts nbsp Bake for 15 minutes and then reduce heat to 350 degrees and bake another 45 minutes nbsp until your tester comes out clean nbsp Cool on a rack and then carefully remove sides of springform pan When completely cool turn upside-down remove bottom of pan place plate on top and flip over nbsp And ENJOY Peanut Butter Chocolate Chip cookies gluten free as well 1 cup chunky peanut butter1 cup brown sugar1 large egg1 2 tsp vanilla1 cup miniature semisweet chocolate chipsPreheat Oven to 350Mix all ingredients together Spoon onto a parchment-lined cookie sheet and bake for 10-12 minutes in middle of oven until golden nbsp Chicken Breast Cacciatore1 4 cup Extra Virgin Olive Oil EVOO 4 garlic cloves pressed1 Tbsp paprika1 2 tsp crushed red pepper optional 4 boneless skinless chicken breast halves1 28 oz can diced tomatoes1 2 cup minced parsleysalt and pepper to tastePreheat oven to 450 Mix the EVOO garlic paprika and 1 4 cup parsley in a small bowl Place chicken breasts in a baking dish and spread 2 Tbsp of the olive oil mixture on top of the breasts nbsp Add the remaining olive oil mixture to the diced tomatoes and then pour over top nbsp Place in middle of the oven and bake for 20-25 minutes nbsp Top with remaining parsley and serve over brown rice with a side salad Roasted Pork Tenderloin and root vegetables2 small pork tenderloins1 4 cup EVOO1 4 cup dijon mustard4 cloves garlic minced1 Tbsp rosemary minced1 Tbsp balsamic vinegarsalt and pepper to taste4 sweet potatoes sliced3 onions sliced2 cloves of garlic minced2 apples peeled and sliced nbsp salt and pepper to tastePreheat oven to 400 Mix the EVOO mustard vinegar garlic rosemary s and p together nbsp Rub over pork nbsp Place pork in rack in middle of roasting pan Toss the potatoes onions garlic and EVOO together and spread in bottom of roasting pan Bake for 40 minutes nbsp Remove pork tent with tin foil and let sit meanwhile put veggies back in oven for the 5-10 minutes that the pork is resting Slice pork to desired thickness place on platter with vegetables Leftover Brown Rice Stir-FryLeftover rice - 2-4 cups3 Tbsp EVOOAny and or all the following veggies 1-2 onions chopped2-3 cloves of garlic minced3-4 carrots peeled and sliced1 green or red pap per choppedbroccolimushrooms1 4 cup low-sodium gluten-free soy sauce1 egg optional In a large frying pan or wok heat 2 Tbsp olive oil nbsp If using all start with onion then add mushrooms and pepper then carrots garlic and broccoli nbsp Saute until browned and desired doneness Toss the brown rice with 1 Tbsp of EVOO and add to veggies nbsp Turn the heat up so the rice browns for about 5 minutes Add the soy sauce which nicely deglazes the pan and then add an egg if desired Turkey Meatballs1 lb ground turkey can also use grass fed beef 1 garlic clove minced1 slice whole grain bread soaked in 1 4- 1 2 cup skim milk2 Tbsp minced parsley1 egg1 4 cup pecorino romano OR parmesan cheesePreheat oven to 375Mix all ingredients together until well-blended nbsp Roll into balls and place on a parchment-lined baking sheet nbsp Bake 20-30 minutes until nicely browned checking and turning as you go Use your own sauce or a jar but make sure no sugar added nbsp Add turkey balls to sauce and heat nbsp Serve over whole wheat spaghetti Jen s Simple Pizza1 whole wheat lavash wrapFor red sauce 1 small can tomato sauce1 clove garlic sliced1 Tbsp EVOOpinch red pepper flakes optional dried oregano basil or italian seasonings nbsp salt and pepper to tastelow fat shredded mozzarellaPreheat oven to 400Heat the EVOO in small saucepan nbsp Add garlic pepper flakes and seasoning and heat for about a minute being careful not to burn the garlic nbsp Add the tomato sauce and cook over low-medium heat nbsp Spray the baking sheet with pam Place the lavash on baking sheet and add sauce and a handful of shredded cheese nbsp Bake for 10 minutes or so until cheese is melted and bubbling For the white topping 2 onions sliced2 Tbsp EVOOCrumbled goat cheese or fetaSliced olivesArugula and balsamic vinegar optional but delicious Saute onions until golden nbsp Spread on lavash add cheese and olives and bake as above nbsp Throw a handful of arugula on top of oven-hot pizza with a drizzle of balsamic vinegar for a special treat img src http feeds feedburner com r HeirloomMeals 4 R9NzJwoaINE height 1 width 1 alt

this is the season s closing newsletter nbsp Each season has its own highlights and its own challenges but this one was on the whole so much sunnier and yield-I-er than 2009 that I can t help but feel a little sad to see it ending nbsp Of course with each season I learn more about how to do things better next time and we have many ideas intentions and plans for next season already brewing nbsp But and this is where you come in we want your feedback too WHAT DID YOU THINK I will email out and also have copies at the table of our end-of-season questionnaire that is designed to help us understand your experience as a CSA member of FGF nbsp How did you use your veggies how many people are you feeding what did you get sick of if anything what did you long for more of nbsp If we see a pattern and there is something we can do to change our field plan to accommodate a change we ll do it nbsp For example 4 and 5 years ago the message was clear MORE ONIONS PLEASE So we grew more onions nbsp On our very limited land more of something inevitably means less of something else so we want to know if you felt overloaded with something nbsp This year for example we clearly had too much land in watermelons so we ll cut back on that crop a bit next year and reallocate that space to grow more of the things we never had enough of in my opinion beets and carrots nbsp So please fill out your questionnaires LOOKING AHEAD TO 2011If you loved your farmshare and farmers so much this year that you can t wait to sign up again for next year then sign up before December 31 and get this year s share price nbsp After the January 1 the price will go up incrementally to reflect rising production costs nbsp The advantage to FGF to have some early bird sign-ups is huge your early infusion of DO WE DO ALL WINTER We put the farm to bed between now and Thanksgiving or the first week of December nbsp We ll have a few things to harvest for the pre-Thanksgiving Holiday Farmers Market on order seeds that last one is a monumental task that reminds me of writing my masters thesis nbsp In addition I am very excited to report that I was accepted into a class called Whole Farm Planning for Women in Agriculture a 10-class workshop sponsored by Pioneer Valley s Community Involved in Sustaining Agriculture CISA nbsp There will be 15 of us from all over the state whose businesses are at least a few seasons established but who have less than 10 years experience in farming meeting on Saturdays and Sundays throughout the winter and spring to determine under the guidance of several mentor established nbsp successful women farmers next directions for our own operations nbsp I hope to emerge from this work with more clarity about medium- and long-term goals and a sense of the priorities tractor first or new greenhouse nbsp More land now or later nbsp And as if that won t be enough time in the classroom Vivian and I together will participate 5-day workshop on soil and plant health called Nutrient Dense Crop Production held by the Real Food Campaign our sessions will be held at Hawthorne Valley Farm EVENTS TO KEEP YOU HAPPY EVEN THOUGH CSA IS OVER FOR NOWDon t forget that
